Baldo Baldinini is quietly and humbly redefining the world of Italian gin, vermouth and amaro from his laboratory in Rimini, on the Adriatic coast of Emilia-Romagna. Alchemist, perfumer and revolutionary liquorist, he has set the bar so high that it is near impossible for anyone to rival his creations. Baldo's essenze are based on the world's purest inputs — sourced from the high-end perfumery market and hand-extracted in house. His dedication to aroma has been unwavering throughout his life. He maintains a secret aroma bank of tens of thousands of herbs, spices, barks, plants, flowers and roots, and receives guests at the Olfattorio — an extraordinary Aladdin's cave of tinctures and history within Tenuta Saiano, an organic farm deep in the Rimini countryside. The results are spirits unlike anything else behind any bar in the world. No single element overpowers another.
