This is a category we love deeply — the culture of aperitivo and digestivo, the ritual of a well-made vermouth, the slow pleasure of a great amaro. Our spirits selection reflects that passion seriously, and spans Italy, France and Spain. At the heart of it is DiBaldo, the extraordinary Italian alchemist from Rimini whose gins and aromatised wines have quietly set a new benchmark for the category. Joining him are Vermeil — a French artisan making superb vermouth and a wonderful traditional pastis — and Manuel, a Basque vermouth producer from San Sebastián whose work reflects the deep-rooted vermouth culture of northern Spain. Beyond these three we stock a carefully chosen range of amaro, grappa and artisan spirits — bitter, aromatic, herbal and occasionally surprising. These are drinks with centuries of tradition behind them, made by producers who understand that what you drink before and after a meal matters as much as what's in the glass during it.
