Vermeil Spirits is one of the most exciting small-batch producers we've ever come across — and one of the reasons our spirits selection exists. Founded in 2022 by long-time friends Baptiste and Roberto on the Côte Vermeille in Collioure, Roussillon, Vermeil is rooted in southern French terroir and a deep commitment to artisan methods. All distillation is carried out in a copper still, operated entirely by hand and heated by a wood fire, in collaboration with master distiller Simon Tardieu. Everything is certified organic.
The range currently comprises two exceptional products:
**Vermeil Vermut** — built on an organic Muscat de Rivesaltes base and infused with a dozen carefully selected botanicals including bitter orange, gentian and juniper. Gentle sweetness balanced by herbal complexity — perfect over ice or at the heart of a classic cocktail.
**Vermeil Pastis** — an artisan pastis distilled from a locally sourced organic wine base with star anise, wild fennel, cardamom, wormwood, verbena and anethole. Its distinctive colour comes from plant extracts alone. A top-shelf take on the great French anise apéritif — serve with water to open up its aromatic richness, and add ice second if you're so inclined.
