Manuel is our kind of vermouth — deeply rooted in tradition, made with obsessive attention to ingredients, and born from a genuine love of northern Spain's world-leading aperitivo culture. The palate behind Manuel is Clément Cantenys, a French ex-pat and wine lover based in San Sebastián who became so besotted with Basque vermouth culture that he decided to make his own. Working with the team at Distilerías Acha — the oldest distillery in the Basque Country, where the base spirit is crafted using a Cognac still from 1831 — Clément has created two exceptional vermouths that honour Spanish tradition while bringing a distinctly personal vision to the glass.
**Manuel Vermouth Rojo** — infused with over 30 botanicals, with a focus on wormwood, cinnamon and tangy citrus. Beautifully balanced, endlessly versatile. The classic Spanish red vermouth done properly — pour over ice, build a Negroni, or drink it the traditional way with crisps, olives and a gilda skewer.
**Manuel Vermouth Bianco 'Extra Dry'** — based on Amontillado from Jérez and Airén from Navarra, uniquely infused with Guindilla peppers. The result is a mouth-watering, salty-sour, savoury white vermouth unlike anything else. Perfect for martinis and Negroni Blancos. Aperitivo is incomplete without vermouth. And vermouth is incomplete without Manuel.
