A legendary cru and the crown jewel of Antoniolo’s holdings, Osso San Grato is 100% Nebbiolo (old local clones) from a five-hectare monopole that towers above the town of Gattinara. Planted between 1940 and 1950, the vines rise to 500 meters above sea level on pale, dusty topsoils of clay and mineral sand layered over igneous rock. It is one of the world’s great Nebbiolo vineyards and produces a wine of striking purity and longevity — taut, mineral, and deeply expressive of its volcanic terrain. It stands as the traditional, age-worthy counterpoint to San Francesco’s supple modernity, together defining both Antoniolo, and Gattinara itself.
Fermentation is spontaneous, with an 18-day maceration in concrete vats and no temperature control. The wine then matures for 36 months in a combination of large Slavonian and French oak casks (25–35HL), followed by a further 12 months of refinement in bottle.
